Recipe time: Recipe #3

Here's another one for you to enjoy. This one has an ingredient that might be hard to find abroad, but easy and cheap here: Fiskeboller (knetti on the Faroe Islands).

"Fiskeboller" with seafood-risotto




What you need:

For 4 people:

1 chopped onion
2 1/2 dl rice
2 tbs oil
1 tsp salt
5 dl water
1 can/box of blue mussel
1 can/box of crab
1 chopped green bell pepper
1 tbs oil
powdered garlic
curry
1 big can of "fiskeboller"

for the sauce:
2 tbs butter
1 1/2 tbs flour
5 dl mixed fish stock and milk
salt
white pepper
tomato purè

This is how you prepare it:
1: Steam onion and rice in the oil and ad salt and water.
2: let it simmer under lid for ap. 20 min.
3: steam the bell pepper and seafood in oil, ad garlic and curry to taste and stir into the rice.
4: sauce: smelt the butter and ad the flour. ad milk and stock a little at a time.
5: add salt and pepper to taste and add a little tomato purè to add color.
6: Ad the "fiskeboller" to the sauce and let them warm up.

Serve: lay the risotto in a circle on a platter and poor the sauce and "fiskeboller" in the middle.

Variation: the blue mussel can be exchanged for some other type of shell.
