Veggie stew/soup with noodles.
What you need:
For 4 people
2 onions
3 carrots
2 potatoes
1 root parsley
1 pack of frozen beans
2 tbs butter
3-4 dl stock
3-4 tomatoes
1 cup of noodles
salt
pepper
marjoram
2 tsp cream or sour cream
preparation time: 30 min.
This is how you make it:
1: clean and dice the vegetables
2: slightly roast them with the butter in a pot.
3: poor the stock over the vegetables and let it simmer till the veggies are almost tender.
4: dice the tomatoes and add them and the noodles to the stew/soup.
5: add spices to taste and let simmer until everything is tender.
6: stir in cream or sour cream just before serving the stew/soup.
Serve: with whole wheat buns or white bread.
variation: use different vegetables depending on taste or season.
