Hearts of Palm with custard sauce.
What you need:
Serves 4.
1 can of Hearts of Palm
1 yolk
salt
1 dl oil
juice from 1/2 lemon
white pepper
1 egg white
1 dl cream
For decorations:
slices of tomato
fresh spinach
How to prepare it:
1: remove the Hearts of Palm from the can and let them drain for a while.
2: stir the yolk till it's sticky with 1/2 the salt. add the oil little by little (a drop at a time to start).
3: add salt, lemon juice and white pepper to taste.
4: whip the egg white and cream separately and add them carefully to the custard.
5: Arrange the Hearts of Palm on a platter and poor the sauce over.
6: Add decorations and serve.
Serve: with white bread or buns and butter.
Variations: instead of Hearts of palm you can use the white of leek and salted water.
